In Holland, summer is almost over, it's getting colder and darker outside...
A pity really but whatever happens, our grill will still be burning!!
What goes well with grilled meat is a real summer-salad:
What you need:
- 5 tomatoes
- 2 spoons balsamic vinegar
- 1 clove of garlic, minced
- 4 spoons olive oil
- 1 teaspoon sugar or honey
- 25gr pinenuts
- 75gr italian parmaham
- 100gr soft goat cheese
- 150gr rocket salad
- some salt and pepper
Cut the tomatoes in quarters.
Make a dressing from the balsamic, the minced clove of garlic, olive oil and the sugar (or honey).
Add a little bit of salt and pepper, just for the taste.
Add the dressing to the tomatoes and let stand for about 15 minutes so that all the flavours
will blend in.
Roast the pinenuts in a dry skillet, there is no need adding oil or butter.
Cut the italian parmaham in little pieces and also the goat cheese.
Put the rocket salad in a big mix bowl and add the tomatoes with the dressing.
Then add the italian parmaham, the goat cheese and the roasted pine nuts.
Serve with a french baguette or some other fresh baked bread!
With this salad, summer stays a little bit longer in your heart... it's delicious!!
